FROM THE MOST FRAGRANT GRAINS COMES SICILIAN BROWN BREAD

“Sicilian Brown Bread” is made using a selection of Sicilian durum wheat: to improve the gluten mesh of doughs we added a small amount of Simeto hard durum wheat, a variety that is selected and cultivated organically that has high quality gluten.

Our flour mixture is ideal for bread making: the ancient grains give the bread unique aromas and flavours and some of these like Black Madonie bread give the bread a particularly intense distinctive coffee colour. To preserve this wealth of aromas we grind the grain using natural La Ferté stone that preserves the nutritional characteristics from the fibre and the wheat germ given its low working temperature.  The other grains that are added to our mixture are Russello, Nero Madonita, Perciasacchi and Bidì.
